I wash my jars in hot soapy water and rinse. I then place both wet jar and lid on the shelf in the oven on a low heat - about 120 C for about an hour or at the very least, until all the water has evaporated. A chutney will keep this way for a year. Mine never last that long. I don't process chutney's in a water bath.
